TRADITIONAL MEXICAN CUISINE: CULTURAL HERITAGE OF HUMANITY

Abstract

Traditional Mexican food has been recognized by UNESCO as intangible cultural heritage of humanity. The criteria considered by the World Heritage Committee to make this declaration were several: antiquity of our cuisine, continuity and permanence until today; geographical coverage and population coverage; daily character and festive character. 

This article presents and explains the criteria and the way in which they are valid for the different types of food. Moreover, because of the impact that globalization and consumerism have had on the perception, consumption habits and the quality of the ingredients that currently constitute the diet of the contemporary population. Each and every one of them, have considered food as a consumer product that among others, has failed to take into account the balance of its nutritional benefits, the food congruence of the traditional culture of corn, which exists behind it.
